Everyday paneer bhurji

A 15-minute paneer scramble, the vegetarian answer to a quick, high-protein dinner. The whole skill is not overcooking the cheese.

Why this recipe works

Paneer is fresh cheese, milk curdled with a little acid so the protein (casein) sets and the whey drains off. That makes it a compact, high-protein, high-calcium ingredient. The one catch: heat tightens that protein, so overcooked paneer squeezes out its moisture and turns rubbery. Add it late, cook it briefly, and it stays soft.

    Crumble the paneer coarsely by hand. If it feels firm or dry, soak it in warm water for five minutes first, then drain.

    Why: warm water rehydrates paneer that has firmed up in the fridge, so it scrambles soft instead of chewy.

    Heat the oil, crackle the cumin, then soften the onion, ginger and green chilli. Add the tomato, turmeric and chilli powder, and cook to a quick masala.

    Why: the same fast onion-tomato base as any bhurji; cumin blooms in the fat and the turmeric colours the scramble.

    Fold in the crumbled paneer with salt and toss for just 2 to 3 minutes, until warmed through and coated. Finish with garam masala and coriander.

    The key step: paneer is already cooked; it only needs warming. Long frying tightens the casein and drives out moisture, which is exactly what makes paneer go rubbery. Keep it brief.
