Decode Indian food in 10 minutes

Hundreds of dishes, one small grammar. Learn the handful of patterns underneath, and almost any Indian meal suddenly makes sense, to read and to cook.

The short version

Indian cooking is not hundreds of unrelated recipes. It is three repeating ideas: a plate built from a few components, a technique (the tadka) that carries flavour, and spices added in a set order. Regions swap the fat and the souring agent, but the grammar underneath barely changes.

The reason Indian food feels impenetrable from the outside is that it is usually taught as a pile of recipes: memorise this dish, then that one, then two hundred more. But home cooks are not carrying two hundred recipes in their heads. They are running a small set of patterns, over and over, with different ingredients slotted in. Learn the patterns and you stop memorising and start understanding.

There are three to know. Get these, and the rest is variation.

1. The plate is a template

An everyday Indian meal is not one hero dish; it is a balanced set of components that together cover protein, fibre, carbohydrate and freshness. Once you can name the slots, you can read any thali.

Dal or legume · protein

The protein-and-fibre engine of the plate. See moong dal.

Grain · energy

Roti, rice or millet. The whole-grain versions bring fibre and a gentler glycaemic load.

Sabzi · vegetables

A cooked vegetable, often spiced with a tadka. See jeera aloo.

Curd, pickle, fresh · balance

Yoghurt or chaas, a fermented pickle, a raw salad or chutney. Sourness, probiotics and crunch.

2. Tadka is the technique that does the work

If there is one move to understand, it is the tadka (also chhaunk or tempering): whole spices sizzled in hot fat for a few seconds, either at the start of a dish or poured over it at the end. It looks like a flourish. It is actually chemistry.

Most spice aroma compounds are fat-soluble and volatile. Dropped into water they barely register; bloomed in hot oil or ghee they dissolve into the fat and perfume the entire dish. That is the whole reason the technique exists, and why the same spice can taste flat or fragrant depending on how it went in.

3. Spices go in layers, in order

The single most useful thing to notice is that spices are not thrown in together. They enter a dish in three waves, and the order is the logic.

Early · whole

In the fat

Whole seeds like cumin, mustard and ajwain, bloomed in hot oil to build the base aroma.

Middle · ground

In the masala

Ground turmeric, coriander and chilli, cooked into the onion-tomato base so they lose their raw edge.

Late · finishing

Off the heat

Garam masala, crushed cardamom, kasuri methi and fresh coriander, for aromas that would cook away.

Delicate, volatile aromas go in last so heat does not drive them off; robust, raw-tasting ground spices go in early so heat can mellow them. It is the same logic a perfumer uses with top and base notes.

Regions change the accent, not the grammar

What makes a dish taste "South Indian" or "Bengali" is mostly two swaps: the cooking fat and the souring agent. The component plate and the layering stay put.

North

Ghee and cream, dairy, wheat rotis; souring from yoghurt and tomato.

South

Coconut oil, curry leaves, rice and fermented batters; souring from tamarind.

East

Mustard oil and the five-seed panch phoron; souring from raw mango and tamarind.

West

Groundnut oil and a sweet-sour balance with jaggery, kokum and tamarind.

The whole grammar, in one line

Hold that, and you are no longer memorising recipes. You are reading them.
