Why does yogurt split in a curry, and when should you add it?

Yogurt turns gravies from kadhi to korma silky, right up until it splits into grainy curds and thin whey. We look at why it happens, and the simple rules that reliably prevent it.

where an acidic yogurt curdles

Heat an acidic yogurt past roughly 80°C, especially cold and unstirred, and its milk proteins clump, splitting the smooth gel into grainy curds and watery whey.

Every cook has done it: stirred yogurt into a bubbling gravy and watched it turn from creamy to grainy in seconds. It looks like bad luck. It is actually predictable, and preventable, chemistry.

Why yogurt is fragile

Yogurt is an acidic gel of milk proteins, mostly casein, held in a delicate suspension. Heat makes those proteins move and clump, and the acidity of the yogurt pushes them to the edge of stability. Tip it over, and the proteins bond into curds while the whey weeps out.

The three triggers

Splitting needs a push, and usually gets three at once: high heat or a rolling boil; the acidity of the yogurt itself; and thermal shock, cold yogurt dropped straight into a hot pan. Remove any of these and it usually holds.

How the kitchen prevents it

Indian cooking has four defences. Whisk the yogurt smooth and bring it to room temperature. Add it off the heat or on low, stirring. Stabilise it with a teaspoon of gram flour (besan) or cornflour, whose starch shields the proteins, exactly what kadhi does, which is why it can then simmer for half an hour. Or temper it: stir a ladle of hot gravy into the yogurt first to warm it gently.

When it is fine

Once stabilised with besan, yogurt curries like kadhi boil happily. And gentle, low-heat additions give the silky, tangy gravies of doi maach, korma and shahi paneer, no splitting, all smoothness.

Silky yogurt gravies are a matter of method, not luck. Five moves keep them smooth.

    Whisk it smooth, at room temperature

    Cold, lumpy yogurt splits fastest, take the chill off and beat it silky first.

    Add on low heat, stirring

    Lower the flame, add the yogurt gradually, and keep it moving.

    Stabilise with a little besan

    A teaspoon of gram flour or cornflour lets yogurt simmer without splitting, the kadhi trick.

    Stir a ladle of hot gravy into the yogurt to warm it before it goes in the pan.

    Once it is in, keep it gentle unless you have added besan.
