Sprouting: does it really boost nutrition?
Soak a moong bean until it grows a tail and something changes. We look at whether sprouting genuinely improves vitamins, protein and mineral absorption, and the safety caveat nobody mentions.

Germination activates the seed’s own enzymes, cutting a large share of the phytate that blocks iron and zinc, and it makes vitamin C the dry seed never had.1
A dry moong bean is dormant. Soak it, drain it, keep it warm and damp, and within a day or two a little white tail appears. The seed has woken up and started to grow, and in doing so it rewrites its own nutrition.
The seed wakes up
Germination switches on the seed’s enzymes, which begin mobilising its stored reserves to build a seedling. That metabolic activity is what changes the nutrition, it is not that you have added anything, but that the seed is now transforming itself.
Anti-nutrients fall
The seed’s own phytase ramps up and breaks down phytate, the compound that binds iron and zinc, so more of those minerals become absorbable.1 Enzyme inhibitors and the gas-causing oligosaccharides drop too, which is why sprouted legumes tend to sit even lighter than merely soaked ones.
New nutrients appear
The headline gain is vitamin C: dry legumes contain almost none, and the growing sprout synthesises it from scratch.2 Some B-vitamins rise, and the protein becomes more digestible as it is partly broken into free amino acids. That said, sprouting does not magically add bulk protein, the quantity is similar; what improves is quality and availability. That distinction is where the marketing gets ahead of the science.
The safety caveat nobody mentions
Sprouts grow in exactly the warm, moist conditions bacteria love, and raw sprouts have caused real Salmonella and E. coli outbreaks.3 Rinse them well and often, keep them clean, and for anyone vulnerable, pregnant, elderly, very young, or immunocompromised, steam or cook the sprouts rather than eating them raw. A quick blanch keeps most of the benefit and removes most of the risk.

Sprouting is easy, and one safety step makes it genuinely worth it.

Soak, drain, and keep damp
Soak overnight, drain well, then keep the beans moist and airy in a cloth or jar for a day or two.

Rinse two or three times a day
This keeps them fresh and is your main defence against bacteria.

Blanch or steam for anyone vulnerable
A quick cook removes most of the pathogen risk while keeping most of the nutrition.

Eat with lemon
The vitamin C the sprout just made, plus a squeeze of lemon, boosts iron absorption further, as in sprout chaat.

Chana, matki and other legumes sprout just as well for chaats and salads.
