Does microwaving destroy nutrients (or your food)?

The microwave is treated with quiet suspicion: radiation, "dead" food, lost vitamins. Almost all of it is myth. Here is what microwaving actually does, and why it is often one of the gentler methods.

Microwaves heat food and stop the instant the oven switches off, they leave nothing radioactive behind, and because cooking is fast and low-water, vitamins are often well preserved.

Few kitchen tools are as useful, or as unfairly maligned, as the microwave. The fears cluster around two ideas: that it irradiates your food, and that it strips the nutrition out. Both fall apart on inspection.

How it actually heats

A microwave uses non-ionising radiation to make the water molecules in food vibrate, which produces heat from within. It does not make food radioactive, and it does not alter it chemically in any sinister way. Switch the oven off and the microwaves are simply gone, like light when you flick a lamp.

The nutrient question

As with the pressure cooker, nutrient loss is driven by time and water, not the heating method itself. Microwaving is fast and uses little or no water, so it often retains vitamins as well as or better than boiling. Microwave-steaming vegetables is genuinely one of the better ways to keep their nutrients.1

Where the scare came from

The famous "microwaving destroys broccoli's antioxidants" headline came from a study that microwaved it in plenty of water, so the losses were from leaching, exactly what happens when you boil. Cook with little water and the effect vanishes. The water was the culprit, not the microwave.

The one real caution

It is not the food, it is the container: some plastics can leach compounds when heated. Use glass or ceramic, cover and stir for even heating, and the microwave is a fast, gentle, perfectly safe way to cook and reheat.
