Do you need to soak nuts and peel almonds?

Grandmothers soak almonds overnight and slip off the skins before eating. Is it a meaningful nutrition step, or a comforting ritual? The honest answer is: a little of each.

Soaking softens nuts and removes some skin tannins, a small, real benefit, but the anti-nutrient reduction is modest, far less than soaking dal, so raw nuts are fine too.

In countless homes the morning starts the same way: a few almonds, soaked overnight, skins pinched off, eaten with intent. It is a lovely ritual. How much of it is nutrition?

What soaking does

Soaking softens the nut, leaches some tannins from the skin, and slightly reduces phytates and enzyme inhibitors, which is why some people find soaked nuts easier to digest. But nuts contain far less phytate, and less of the enzyme (phytase) that breaks it down, than legumes do, so the effect is modest, much smaller than soaking dal (see the dal experiment).

The almond skin

The brown skin carries tannins that can slightly inhibit iron and mineral absorption and taste faintly bitter. Peeling removes them and, for some, makes almonds gentler to digest. It is a minor effect, not a transformation.

What you do not gain

Soaking does not meaningfully change a nut's protein or fat, and the idea that soaked almonds are vastly more nutritious is oversold. Raw and roasted nuts are both perfectly nutritious, roasting loses a little of some vitamins, and that is all.

The verdict

Soak and peel if you like the softer texture and easier digestion, it is a pleasant ritual with a small, genuine basis. But do not feel you must: a handful of raw or roasted nuts is excellent either way. One practical note, refrigerate soaked nuts, as they spoil.
