Does washing rice actually reduce arsenic?
Rice takes up more arsenic from soil and water than most crops. Does rinsing, or the way you cook it, genuinely lower it? A quietly important one for a rice-heavy diet.

How you cook rice matters more than most people realise: rinsing well and cooking it in plenty of water you then drain can remove a large share of its inorganic arsenic.1
It is not a comfortable fact about a food half the world lives on, but it is a manageable one. Rice carries more arsenic than other grains, and how you rinse and cook it changes how much ends up on your plate.
Why rice has arsenic
Grown in flooded paddies, rice takes up inorganic arsenic, a naturally occurring and partly pollution-derived contaminant, far more readily than other cereals. High, long-term intake is a genuine concern, and matters most for infants and for diets where rice is nearly every meal.
What washing does
Rinsing rice until the water runs clear removes some surface arsenic, a modest help. But the bigger lever is not the rinse, it is the cooking method.
The method that works
Cooking rice in plenty of water and draining it, like pasta (roughly six parts water to one of rice), removes far more inorganic arsenic than the usual absorption method, where all the water is soaked up. Pre-soaking and draining first helps further.1 The trade-off: draining loses some water-soluble B-vitamins, a fair exchange for a very rice-heavy diet.
Perspective, not panic
For most adults eating a varied diet, this is a minor risk, not a reason to fear rice. It matters more if rice is truly every meal, and for infants (do not rely on rice cereal alone). The simplest insurance is variety: rotate in millets and wheat.
