Does resting the dough really make better rotis?
Knead the atta, then let it sit. Every good cook insists on a rest before rolling. Is it just habit, or does resting the dough genuinely change your roti? It comes down to water and gluten.
the rest that transforms a roti
Give kneaded dough 20 to 30 minutes to rest and it turns softer, stretchier and far easier to roll, because of what water and gluten quietly do in that time.
Ask why the dough has to sit and most cooks just say "it has to". They are right, even if the reason goes unspoken. In those twenty minutes on the counter, the dough is doing real work.
What kneading starts
Mix water into atta and its proteins link up into gluten, an elastic network. Kneading develops that network, but it leaves it tight and tense, and the flour, especially the bran, has not yet fully soaked up the water.
What resting does
Two things happen as it rests. The flour fully hydrates, water works its way into every particle of starch and bran. And the tense gluten strands relax, releasing the tension that kneading built up. Together they give a dough that is soft, extensible and rolls thin without springing back or tearing, and rotis that are softer and puff better.
Whole wheat needs it most
Atta's bran absorbs water slowly, so whole-wheat dough benefits from resting even more than refined maida dough. A rested atta is the difference between a roti you fight with and one that rolls like silk.
The one rule: keep it covered
Cover the dough (a damp cloth, or a smear of oil) so it does not dry and crust. Twenty to thirty minutes is plenty for roti and paratha, leave it too long in a warm kitchen and it can begin to ferment and sour, which suits some breads but not a soft chapati.
