Does a pinch of cooking soda wreck the nutrition?

A pinch of baking soda softens chana faster and keeps green vegetables vivid. It genuinely works, but it is not free, the same soda quietly destroys certain vitamins. The honest tradeoff.

faster, but at a cost

A pinch of soda roughly halves the time to soften chana and keeps greens bright, but the same alkalinity destroys thiamine (B1) and vitamin C.

It is an old kitchen shortcut: a pinch of cooking soda in the chana pot to soften it faster, or in the water to keep the bhaji a vivid green. It does exactly what is promised. The question is what it quietly costs.

Why soda works

Baking soda is alkaline, it raises the pH. That does two useful things: it breaks down the pectin in cell walls faster, so beans soften more quickly, and it stabilises chlorophyll, so green vegetables stay bright green instead of turning drab. It also lightens batters as a leavener.

The hidden cost

The catch is that alkaline conditions destroy heat-sensitive vitamins, especially thiamine (vitamin B1) and vitamin C.1 The very chemistry that softens the bean and greens the spinach is degrading its nutrition at the same time. Too much soda also turns food mushy and gives a faintly soapy taste.

The better way

You rarely need it. Soaking and pressure-cooking softens even old chana beautifully without soda, and keeps the nutrients (see the pressure-cooker experiment). For green vegetables, a quick blanch and cooking uncovered keeps colour without the vitamin loss.

So, never?

Not quite. A tiny pinch to rescue very old, stubborn beans occasionally is fine, and soda is a legitimate leavener in small amounts in dhokla and bhatura. Just do not make it a routine addition to every pot for speed or colour, the vitamins are the price.

Alkaline cooking (soda) degrades thiamine and vitamin C. It speeds softening, but the vitamins are the cost.

Reach for method, not soda, and keep soda for the jobs it actually belongs to.
