Why milk kills chilli heat, and water makes it worse

Reach for water after a fiery mouthful and the burn only spreads. Reach for milk, lassi or curd and it fades fast. Here is the chemistry of capsaicin, and why dairy beats water every time.

Chilli does not burn with real heat. Its capsaicin hijacks TRPV1, the same receptor that fires for genuine heat above ~43°C, so your brain feels a burn that is not there.

Bite into a fierce green chilli and every instinct says: water, now. It is exactly the wrong move. To understand why, you have to know that the "heat" of chilli is an elaborate trick played on your nervous system.

It is not really heat

The burn comes from capsaicin, the pungent compound in chilli. Capsaicin binds a receptor on your pain nerves called TRPV1, whose normal job is to detect genuinely damaging heat, above about 43°C. Fool that receptor and the brain is told "burning", even though nothing is actually hot.1

Why water fails

Capsaicin is oil-soluble (lipophilic) and barely dissolves in water. Swishing water around just spreads the oily capsaicin to new patches of your mouth, widening the burn without removing it. Cold water numbs for a second, then the heat returns, often worse.

Why milk works

Dairy carries a protein called casein, which acts like a detergent: it surrounds the capsaicin molecules and lifts them off the TRPV1 receptors, washing the burn away.2 The fat in full-fat milk, curd and lassi helps dissolve it too. This is not folklore, it is why lassi, chaas and raita sit beside fiery food across India.

Meals built to balance heat

Look at a spicy thali and the cooling is designed in: a bowl of curd or raita, a sweet lassi, rice to physically blot the mouth, a touch of sugar or jaggery, all of which take the edge off far better than a glass of water.

The fact

Water just spreads the oil-soluble capsaicin around your mouth. Dairy's casein lifts it off your heat receptors, which is exactly why lassi and raita exist.
