Ghee vs oil: does the smoke point actually matter?
Ghee is prized for high-heat cooking, seed oils are cheaper and marketed as heart-healthy. We looked at what the science of smoke points, saturated fat and oxidation really says.

Ghee smokes at around 250°C, well above normal home frying (~180°C), which is exactly why Indian kitchens reach for it, and for mustard oil, at high heat.
Two claims collide in the modern kitchen. One says ghee is a traditional superfood; the other says its saturated fat is bad for your heart and seed oils are healthier. Both are too simple. The useful question is narrower: for a given job, which fat behaves best?
What a smoke point is
Heat any fat far enough and it starts to smoke, breaking down into acrid compounds (including acrolein) and off flavours. A higher smoke point means the fat stays stable at frying and tempering temperatures. For the high heat of a tadka or a deep-fry, stability matters.
Why ghee is so stable
Ghee is butter with the water and milk solids removed. Those milk solids are what burn in butter, take them out and the smoke point jumps to around 250°C. Ghee is also mostly saturated fat, and saturated fats resist oxidation, so ghee holds up to repeated high heat better than delicate oils.1 That is the real, narrow case for ghee: a clean, heat-stable cooking fat.
The saturated-fat question, honestly
Ghee is roughly two-thirds saturated fat. The old "saturated fat causes heart disease" story is more nuanced than once taught, but mainstream guidance still advises keeping saturated fat moderate.2 The sane reading: ghee is neither a health tonic nor a poison. It is a flavourful, stable cooking fat, best used in sensible amounts.
Seed oils, oxidation and the real risk
Polyunsaturated seed oils (sunflower, soybean) are fine fats, but their many double bonds make them less heat-stable: overheated, and especially reused, they oxidise and form aldehydes you would rather not eat.3 The genuine hazard in a lot of cooking is not the oil’s label but the reheated, reused frying oil at the back of the stove.

Never reuse frying oil again and again
Repeatedly reheated oil is the real concern, far more than which oil you started with.

Do not heat oil until it smokes
Smoking means it is already breaking down. Shimmering is hot enough.

Treat ghee as flavour, not medicine
It is mostly saturated fat, wonderful in moderation, not a health supplement.

Cold uses, cold-pressed oils
For dressings and finishing, mustard or extra-virgin olive, where their flavour and delicate fats shine.
