Fermentation: what really happens to idli batter overnight

Leave a rice-and-dal batter out overnight and it rises, sours and transforms. We look at what the microbes actually do, to digestibility, phytates, B-vitamins and blood sugar.

Overnight fermentation can break down a large share of the phytate in a rice-and-dal batter, freeing the iron and zinc it was holding onto.1

You grind rice and dal into a smooth batter, leave it on the counter, and by morning it has risen, smells tangy, and is covered in bubbles. Nobody added yeast. So what did the work, and what did it change?

The overnight ecosystem

The batter ferments itself, using wild microbes already present on the dal and in the air, chiefly the lactic-acid bacterium Leuconostoc mesenteroides and wild yeasts. They feed on the batter’s sugars and produce three things: carbon dioxide (the rise), lactic acid (the sour tang and a lower pH), and a range of new compounds.2

Easier to digest, and more minerals

The microbes do some of your digestion in advance. They partly break down starches and proteins, and, crucially, their enzymes degrade phytate, the compound that locks up iron and zinc, so more of those minerals become absorbable.1 They also reduce the gas-causing oligosaccharides, so fermented batter sits lighter than an unfermented one.

New vitamins appear

Fermentation genuinely increases several B-vitamins, and studies of idli batter have found that bacteria can generate vitamin B12, notable because plant foods otherwise contain almost none, a real bonus in a vegetarian diet.2,3 The lower pH and pre-digestion also tend to blunt the blood-sugar spike a little compared with the same ingredients unfermented.

The honest catch: idli is not "probiotic"

Here is the nuance the wellness posts skip. The good bacteria are alive in the raw batter, but steaming the idli (or crisping a dosa) kills them. So idli is not a source of live probiotics. Its benefits are the chemical gains baked in during fermentation, more minerals, more vitamins, easier digestion, not live cultures. For living cultures you want a raw ferment like kanji.

Fermentation is mostly patience, but a few things help it along, and set expectations.

    Give it a warm spot

    Fermentation is temperature-driven, 8 to 12 hours somewhere warm, longer in a cold kitchen.

    Do not over-ferment

    Too long and it turns sharply sour and flat. Refrigerate once it has risen.

    A pinch of fenugreek helps

    Fenugreek in the batter aids the ferment and adds aroma.

    Steam gently for idli

    Steaming is a mild cook that keeps more of the nutrients than deep-frying.

    Want live cultures? Go raw

    Steamed idli is not probiotic, drink a raw ferment like kanji for that.
