When should you actually add salt?

Salt early or late? On the meat, in the water, over the salad? The arguments never end. The answer comes down to a single force, osmosis, and it changes with what you are cooking.

Salt has one trick, osmosis, pulling water across membranes. Push it far enough and it draws water out of microbes themselves, which is why a well-salted pickle keeps for a year.

Salt looks like the simplest thing in the kitchen, and hides the most argument. The trick to knowing when to add it is realising that salt does exactly one thing physically: it moves water, by osmosis, from wherever there is less salt to wherever there is more. Everything else follows.

When you want water out: salt early

Sprinkle salt on cut eggplant, cucumber, cabbage or onion and it draws out water, and with it bitterness, before you cook or dress them. Pack a lemon or mango in salt and osmosis pulls water from the fruit and from any microbes, which is precisely how a pickle keeps for months. When the goal is to remove water, salt early.

When you want flavour in: salt ahead

Salt meat, chicken or paneer in advance (a dry brine) and something clever happens: salt first pulls moisture to the surface, then that seasoned brine is reabsorbed, carrying salt deep inside and helping the food stay juicy. This is why a tandoori marinade works best given time, not salted at the last second. Salting the cooking water seasons rice and vegetables from within, too.

When to hold off: salt late

For leafy greens and crisp salads, salt at the very end, salt them early and osmosis makes them weep, going limp and drab. And the famous warning that salt makes beans hard is largely a myth: it is acid (tomato, tamarind) added early that slows beans softening far more than salt does.

The one-line rule

Water out, salt early. Flavour deep into meat, salt ahead. Crisp and green, salt late. Once you see salt as a water pump, the timing stops being folklore and starts being physics.
