Is it really dangerous to reheat spinach and leafy greens?

A common warning says never reheat cooked spinach, the nitrates turn toxic. There is real chemistry here, but the rule as usually stated is mangled. Here is what actually matters.

The real issue with cooked greens is leaving them warm for hours (nitrate converts to nitrite), not a quick, thorough reheat of properly stored greens.

The warning is common: never reheat spinach, it becomes poisonous. There is a genuine bit of chemistry buried in it, but the popular version blames the wrong step.

The real chemistry

Leafy greens, spinach, amaranth, beet greens, are naturally high in nitrate. When cooked greens sit warm for hours, bacteria convert that nitrate into nitrite (and potentially nitrosamines). High nitrite is the actual concern, especially for infants, in whom it can affect the blood's oxygen-carrying.1

So it is not the reheating

The culprit is time spent warm, not the act of reheating. Cooked greens that are cooled quickly, refrigerated promptly and then reheated once, thoroughly, are fine. The trouble comes from greens left sitting out, cooled slowly, or reheated again and again over days.

Who should be careful

For healthy adults, the occasional reheated portion is a low risk. The group that genuinely matters is infants, do not give babies spinach purees that have been cooked, stored and reheated.

The practical rule

Treat greens like any food you want to store safely: cool fast, fridge promptly, reheat once and properly. Do that and your leftover saag or palak is perfectly fine.
