Why this recipe works

Uttapam is the same fermented batter as idli and dosa, rice and urad dal left overnight so wild microbes sour it, pre-digest the starch, cut phytate and build B vitamins. Poured thick and topped with chopped vegetables, it is griddled, not fried, so it stays light. The toppings turn a simple pancake into a genuinely balanced breakfast.

Ingredients

  • Dosa/idli batter (fermented)3 cups
  • Onion, tomato, green chilli1 + 1 + 2
  • Curry leaves, coriander10 + a handful
  • Oil (to griddle)1 tsp each
  • Saltto taste

Method

    Ferment the rice-and-urad batter overnight until risen and slightly sour.

    Why: the overnight ferment is the nutrition, it pre-digests the grains, lowers phytate so you absorb more minerals, and builds B vitamins.

    Pour a thick round of batter on a hot, lightly oiled tawa.

    Scatter chopped onion, tomato, chilli and coriander over the top and press in gently.

    Why top it raw: pressing the vegetables into the uncooked side steams them lightly as it cooks, keeping their crunch and nutrients.

    Cook until the base is golden, then flip and cook the topping side briefly.

An honest word

Uttapam is one of the better breakfasts going: fermented and so easy to digest, griddled rather than fried, and loaded with vegetables. The only lever is the oil on the tawa, easy to keep light. With coconut chutney and sambar it is a genuinely nourishing, balanced start to the day.
