Why this recipe works

Sandesh is proof a sweet can be light. It is simply chhena, fresh cheese from split milk, kneaded with a modest amount of sugar and cardamom and cooked briefly. There is no soaking syrup and no frying, so it stays low in sugar and fat while keeping the milk protein and calcium of the chhena. Gentle heat is the whole skill.

Ingredients

  • Full-fat milk1 litre
  • Lemon (to split)2 tbsp
  • Sugar1/4 to 1/3 cup
  • Cardamom1/2 tsp
  • Pistachio (to garnish)a few

Method

    Split the milk to chhena, drain and rinse.

    Knead the chhena smooth with the sugar.

    Cook gently on low heat until it just comes together.

    Why low and brief: over-cooking dries chhena into a grainy, crumbly mass, gentle, brief heat keeps sandesh soft and smooth.

    Flavour with cardamom, then shape or press into moulds.

An honest word

Sandesh is one of the lightest Indian sweets you can choose: no frying, no drenching syrup, and far less sugar than most mithai, with genuine milk protein and calcium from the chhena. It is still a sweet, so a modest portion, but as treats go it is a genuinely good one, and easy to make with even less sugar at home.
