Non-stick vs iron: is your tawa safe?

Non-stick pans are convenient and quietly feared; the iron tawa is trusted but heavy. What is the real safety story on coatings and overheating, and which pan belongs to which job?

Modern non-stick is safe in normal cooking, but its coating starts to break down and release fumes above about 260°C, the temperature of a dry, overheated empty pan.

Two pans, two reputations. The non-stick tawa is easy and vaguely distrusted; the iron one is heavy and quietly revered. Both anxieties deserve facts rather than vibes.

The old fear: PFOA

Older non-stick coatings were made using PFOA, a harmful "forever chemical". The important update: PFOA has been phased out of cookware manufacturing for over a decade, so modern non-stick pans are PFOA-free.1

The real caveat: overheating

The non-stick coating (PTFE) is stable at normal cooking temperatures but degrades above ~260°C, releasing fumes. That temperature is reached by a dry, empty pan on high heat, not by normal cooking with food in it. So the rule is simple: never preheat an empty non-stick pan on high, and do not use it for fierce high-heat searing or a smoking tadka.

Scratches and wear

A scratched pan flaking coating is not a major toxicity risk, most PTFE passes straight through the body, but a worn pan is past its best. Use wood or silicone utensils, and replace non-stick when the coating goes.

The iron case, and the verdict

Cast iron and steel are near-indestructible, safe at any heat, and even add a little iron to your food, no coating to fret over, just weight and seasoning. So match the pan to the job: non-stick for gentle, low-medium cooking (eggs, dosa, chilla) without ever overheating it empty, and iron or steel for high heat, tadka and a lifetime of use.
