Why soak it?

Soaked almonds in the morning, dal before it cooks, figs overnight. It is one of the oldest kitchen habits, and unlike a lot of food folklore, there is real science under it, along with one claim that is quietly oversold.

The short answer

Soaking does two real things: it softens and hydrates, and it lowers "anti-nutrients", mainly phytic acid and tannins, that bind minerals like iron and zinc and can irritate digestion. The effect is genuine but modest. It matters most for pulses and whole grains; for nuts it is more about comfort than a big nutritional change. A low-effort habit worth keeping, as long as you do not oversell it.

Seeds, nuts and grains are designed by the plant not to be digested easily. That is the whole point of a seed: to survive being eaten and grow later. So they carry compounds that lock up their own minerals and resist our enzymes, chiefly phytic acid and tannins. Soaking, and its cousin sprouting, is how kitchens have long coaxed a seed to lower those defences, before we had any idea they existed.

What soaking actually does

Three mechanisms, all real. It hydrates and softens, cutting cooking time. It leaches and breaks down phytic acid, the compound that binds iron, zinc and calcium and carries them out of reach, so more of those minerals become available. And in pulses it reduces the oligosaccharides that ferment in the gut and cause gas. Leave a seed long enough and it begins to sprout, which pushes all of this further and even builds a little vitamin C.

What to soak, and why

Almonds Badam

Soak overnight and slip off the brown skin, which holds tannins and enzyme inhibitors. It makes them softer, easier to digest and their nutrients marginally more available. Modest / Emerging. The "far healthier soaked" claim is overstated; the real wins are comfort and skinless texture.

Dal & pulses chana, rajma, kabuli

Here soaking earns its keep: it cuts cooking time, lowers phytic acid so you absorb more iron and zinc, and reduces the oligosaccharides that cause gas. This is the strongest case for soaking. Strong. It is why moong, lowest in them, barely needs it.

Dried figs & prunes Anjeer, aloo bukhara

Soaking plumps and softens them, and here the traditional "good for the gut" reputation holds up: the fibre plus sorbitol in prunes genuinely helps regularity. Strong. The soaking water counts too.

Raisins Kishmish

Soaked overnight, a gentle traditional tonic for a little iron and quick energy. The soaking mainly softens and makes them kinder on the stomach. Modest.

Whole grains & rice Gehun, chawal

Soaking whole or brown rice and millets softens them and lowers phytic acid, improving mineral availability and evenness of cooking. Emerging to Strong.

Other nuts & seeds walnut, pumpkin

Optional. A short soak softens them and can ease digestion for some, but the nutritional change is small. Do it for texture and comfort, not miracles.

The honest bottom line

Soaking is a genuinely good, almost-free habit, and the science backs it, most strongly for pulses and whole grains, where it improves mineral absorption and cuts gas. For nuts, the honest truth is that the benefit is real but small: mostly softer texture and easier digestion, not a nutritional transformation. Keep soaking your dal and your figs. Soak your almonds too if you like them that way, just do not expect magic.
