Why fermentation matters
Idli, dosa, dahi, kanji, achaar. India ferments more than almost any cuisine on earth. Here is what that actually does for your food, and the one claim it is worth being careful about.
The short answer
Fermentation is controlled spoilage: friendly microbes pre-digest food, making it more digestible, more nutritious and longer-lasting. Its most reliable wins are easier digestion and better nutrient availability. The famous "probiotic" benefit is real too, but only for the ferments you eat without cooking, like dahi and kanji, not the ones you steam or fry.
Long before anyone knew what a microbe was, Indian kitchens had domesticated them. Leaving a batter out overnight, souring milk into dahi, packing vegetables into a jar with salt and oil: these are all ways of inviting particular bacteria and yeasts to do useful work on food. The science caught up only recently, and mostly confirmed what the practice already knew.
At its simplest, fermentation is microbes eating the sugars and starches in food and leaving behind acids, gases and new compounds. That souring and bubbling is not decay; it is a transformation with several genuine benefits.
The everyday Indian ferments
Dahi & chaas · uncooked
Milk soured by lactic bacteria. Eaten raw, so its live cultures reach you intact.
Idli & dosa batter · cooked
Rice and urad dal, wild-fermented overnight, then steamed or griddled. See the recipe.

Pickles fermented in oil and salt; dhokla and handvo, batters leavened like idli.
What fermentation does for you
Four things, and they are not equally proven, so we label each one.
Easier to digest
Microbes break down complex starches and proteins in advance, so your gut has less to do. Strong.
More available minerals
It cuts phytate, the compound that locks up iron and zinc, so you absorb more of them. Strong.
Extra B vitamins
The microbes synthesise B vitamins, including some B12, as they work. Emerging.
Live cultures for the gut
Uncooked ferments deliver live bacteria that may support the gut microbiome. Emerging.
The honest bit: cooked vs raw
Here is where a lot of wellness writing slips. Heat kills the live cultures. So a steamed idli or a griddled dosa is not a probiotic food, even though its batter was teeming with bacteria. That is not a failure; the idli still keeps the pre-digestion, the lower phytate and the extra B vitamins that fermentation built in. But if it is live cultures you want, they come from the ferments you eat raw, dahi, chaas, kanji and unheated pickles, not from anything that met a hot pan.
How to get more of it
You almost certainly already eat fermented food daily. A few easy habits raise the dose without any special products:
- Keep a bowl of dahi or a glass of chaas with meals; the simplest live-culture food there is.
- Batch an idli or dosa batter and let it ferment properly; the overnight rise is the nutrition, not just the fluff.
- Make kanji in season for a genuine probiotic drink.
- Let a spoon of real fermented pickle sit on the side of the plate.
