Does dry-roasting spices really change them?
Before grinding a masala, cooks toast the whole spices in a dry pan. Beyond the fragrance, does dry-roasting genuinely transform a spice’s flavour and chemistry? Yes, and here is how.
where new aromas are born
Dry-roasting takes whole spices past about 150°C, hot enough to trigger Maillard reactions that build entirely new roasted aromas that were never in the raw seed.
Open any of the spice-blend recipes on this site and the first instruction is almost always the same: dry-roast the whole spices before you grind. Not fry, not just warm, roast. It is the step that separates a flat masala from a deep one.
Not the same as a tadka
This is different from blooming spices in fat (the tadka). Dry-roasting uses no oil at all: the spices go into a bare hot pan, where the heat drives off their moisture and toasts their surface directly.
What changes chemically
Above roughly 150°C, the sugars and amino acids in the spice undergo Maillard reactions, the same browning that flavours toast and roast coffee, creating new nutty, roasted, complex aroma molecules that simply did not exist in the raw seed.1 Raw, green notes cook off; coriander and cumin especially are transformed. The spice also dries and turns brittle, so it grinds finer.
Why every good masala is roasted first
This is precisely why sambar powder, rasam powder, garam masala and the Chettinad blends are all roasted before grinding. You cannot get that toasted depth by grinding raw spice, no matter how fresh, the flavour is built by the heat, not just released.
The line: fragrant, not burnt
There is a cliff at the far edge. A shade too far and Maillard tips into pyrolysis, acrid, bitter, burnt. So the rule is low heat, constant movement, and stop the moment the aroma blooms. Some spices, fenugreek above all, cross into bitter fast.

Roast whole spices dry, then cool, then grind
