Does cooking in a cast-iron kadhai add iron to your food?
The old iron kadhai (loha kadhai) has a reputation as a quiet health booster. Does cooking in iron genuinely leach iron into your food, enough to matter? The evidence says yes, with conditions.

Cooking acidic, simmered dishes in an iron pan can multiply their iron content, real, absorbable iron that migrates from the metal into the food.1
Grandmothers insisted on the heavy iron kadhai, and not only for how it holds heat. The claim was always health, that food cooked in iron is somehow better for the blood. For once, the folk wisdom lines up with the chemistry.
Iron that migrates
Iron genuinely leaches from a cast-iron or loha pan into the food cooked in it. This is so reliable that public-health programmes have used deliberate iron sources in cooking pots to fight anaemia in populations.2 The pan is, in a small way, an iron supplement you cannot see.
What makes it happen
Three things amplify the transfer: acidity (tamarind, tomato, lemon, amchur), moisture and long simmering, and stirring, which keeps fresh food against the metal. A quick, dry sauté transfers very little; a tangy curry bubbling for half an hour transfers a lot.
Does it actually count?
In acidic, simmered dishes the added iron is meaningful. It is non-heme iron, so, as in the lemon-and-iron experiment, a squeeze of vitamin C helps you absorb it. It will not replace a good diet, but for a vegetarian diet where iron is often marginal, it is a genuine, free top-up.
Using the kadhai well
This is why the loha kadhai suits saag, tamarind curries and tomatoey sabzis. A couple of caveats: acidic food can pick up a faint metallic taste and strip the pan's seasoning, and you should not store cooked food in the pan, sitting for hours over-leaches iron and turns it metallic.
